Neoli Himalayan White is a pure single rum from Himmaleh Spirits, an Indian producer distilling at altitude from fresh-pressed sugar-cane juice rather than molasses. That cane-juice base places it firmly in the agricole style, even though the protected term belongs to the French islands, and it is run off a pot still and bottled unaged.

Cane-juice rum of this kind typically leads with grassy, herbaceous and vegetal notes, fresh sugar-cane sap, white pepper and a dry, briny snap rather than sweetness.
