Hibiscus farms the tiny volcanic island of Ustica off Sicily, using native varieties suited to the sea air. This Grillo is aged on its lees and carries lemon, melon and a saline, herbal freshness drawn straight from the black volcanic soils.

Description
Hibiscus is a small project on Ustica, a volcanic island north of Sicily that is worked by both the sea breeze and the Mediterranean sun. The owners farm native Sicilian grapes such as Grillo, Catarratto and Zibibbo, following local farming and fishing traditions. Grillo is a naturally full-bodied white, and here the dark volcanic soils and the constant salt-laden wind give it a mineral, saline edge that offsets the ripeness of the fruit. The vines sit close to the sea, so the maritime influence runs right through the wine. After fermentation the wine is aged on its lees, which adds body and a fine texture while keeping the fruit fresh. The colour is bright straw-gold. The nose shows lemon, ripe melon and white peach lifted by a herbal, saline note, and the palate is rounded but fresh, with good weight and a clean, salty finish. This is a coastal white built for the table. Serve at 10 to 12 degrees.
