Description
Hibiscus works on Ustica, a small volcanic island in the Tyrrhenian Sea off the northern coast of Sicily. L'Isola Bianco blends the native Catarratto, Grillo and Inzolia grown organically on the island's dark, mineral rich volcanic soils, where the maritime setting and constant sea air keep the fruit fresh and lend a marked salinity. The volcanic ground and low yields give the wine a firm mineral backbone that offsets the warm climate ripeness. Vinification is in stainless steel with four months of reductive ageing, a short cool maturation that protects the aromatics and delivers the wine young and vivid while the sealed tank guards its freshness. Expect a pale straw colour, a nose of citrus, melon, white peach and Mediterranean herbs, and a dry, saline palate with lemon, orchard fruit and a stony volcanic finish. At 12.5% it is light and fresh. Serve well chilled at 9 to 11 degrees.
