Description
Elvi Wines makes this kosher white in D.O. Alella, just north of Barcelona, from Sauvignon Blanc and the local Pansa Blanca, the Alella name for Xarel·lo. The two grapes are picked separately, the Sauvignon Blanc in August and the Pansa Blanca in September, and sorted by hand at the winery. Before pressing, the fruit is chilled with dry ice for six hours, a cold soak that pulls aroma and flavour from the skins while the low temperature keeps oxidation and any harsh phenolics in check. Fermentation is cool and there is no oak, so the wine stays fresh and unforced. Sauvignon Blanc brings green notes and cutting acidity while Pansa Blanca fills the middle with white orchard fruit and a saline edge from the sandy Alella soils near the coast. It is pale in the glass, with green apple, gooseberry, lemon and a hint of white flowers. The palate is crisp and dry with a clean, mineral close. Serve it at 8 to 10 degrees. It suits grilled white fish, shellfish, goat cheese and green salads.
