Description
Le M.D. comes from Chavignol, the Sancerre hamlet where the Bourgeois family has its roots, drawn from a steep south-facing slope of Kimmeridgian limestone. These calcareous stones, laid down by ancient Jurassic seas, are rich in fossilised shell and give the wine its saline drive and chalky freshness, while the full southern exposure ripens the Sauvignon Blanc to a riper, more generous fruit profile. Fermentation is controlled to keep the aromatics intact, and ageing on fine lees rounds the texture and adds a savoury weight to the mid-palate. The colour is pale gold. The nose is expressive and fruit-forward, with passion fruit, juicy pear and lemon zest lifted by white flowers, then a mineral, stony undertone. The palate is dry and full for Sancerre, the ripe citrus and orchard fruit framed by limestone acidity and a long, saline finish. The extra ripeness and lees texture suit a slightly warmer serving temperature, around 11 to 12 degrees.

Pour it with prawns, grilled sole or a warm goat cheese salad, where the ripe fruit and mineral cut balance one another. Its extra weight also stands up to roast chicken or fish in a cream sauce.
