Description
Heidsieck & Co Monopole is a long-established Champagne house, and its Blue Top Brut is the everyday flagship that carries the maison style. Like most non-vintage Champagne it rests on the three classic grapes, Chardonnay, Pinot Noir and Pinot Meunier, blended for consistency across years. The wine is made by the traditional method, with a second fermentation in bottle followed by extended time on the lees. That lees contact is what builds the toasted bread and pastry character alongside the orchard fruit, while the modest brut dosage keeps the finish dry.
In the glass it is pale yellow with a fine, lasting bead. The nose is complex, mixing peach, apricot and ripe yellow fruit with grilled, honeyed and pastry notes. The palate opens with a slightly salty attack, then turns round and fruity with a hint of stone fruit and citrus before a long, even close. Serve at 8 to 10 degrees in a white wine glass. It is a fine aperitif and pairs with oysters, prawns, lobster, pan-fried fish and light starters.
