Description
Hanyu 16 Years Old 1990 is a single cask single malt from the closed Hanyu distillery in Saitama Prefecture, distilled in 1990 and bottled in 2006 by Ichiro Akuto at cask strength. The cask used here is French oak that previously held Cognac, an unusual choice that sets this release apart from the bourbon and sherry-finished bottlings that dominate the Hanyu catalogue.
French oak Cognac casks bring their own distinct character: lighter tannins than American oak, with floral, stone fruit and dried apricot notes typical of Cognac wood, alongside the grape-derived esters from the previous spirit. Over 16 years in this format, the Hanyu distillate would have absorbed a delicate, fruit-forward woodiness rather than the deeper vanilla of bourbon or the dried fruit intensity of sherry. With no individual tasting notes available, the profile is inferred from the cask type.
