Description
Hanyu distillery in Saitama Prefecture closed in 2000, and the casks rescued by Ichiro Akuto were bottled across a wide range of finish styles that reflected his experimental approach to the inherited stock. This single cask from the 2000 vintage was matured in Ex-Bourbon for the bulk of its 14-year life before completing its journey in a Grappa Cask, then bottled in 2014 at 59.9% for the Japanese market.
Grappa cask finishing is unusual in the Hanyu catalogue and brings a continental European influence: dried grape skins, a faint spirit note and a herbal edge layer over the vanilla and toasted grain from the bourbon maturation. The result is drier and more angular than the sherry-finished expressions from the same distillery, giving an insight into the stylistic range that Hanyu's varied cask programme could produce even from the same base vintage.
