Description
Hanyu distillery in Saitama Prefecture was built by Toa Shuzo and closed in 2000, with the remaining casks eventually rescued and bottled by Ichiro Akuto. This single cask expression followed a two-vessel maturation path: an initial fill in a hogshead, then a transfer to an Oloroso Sherry Butt to complete its 11-year journey before bottling in 2011 at 58.6%.
The double-cask path is characteristic of Hanyu's varied approach to finishing. The hogshead phase would have built the base character, vanilla and light cereal, before the Oloroso butt added a second layer of dark dried cherry, fig and warm baking spice. The result is more complex than a single-vessel sherry maturation, with the grain spirit's structure still visible beneath the wood's contribution. Bottled at cask strength for global distribution, this 2011 release represents the middle period of official Hanyu single cask bottlings.
