Habla makes Duende in Extremadura, western Iberia, from organic Sauvignon Blanc. Seven months on the lees in barrel give a fuller, warm climate white of white peach, melon and a soft toasty edge.

Description
Habla farms in Extremadura, the hot, dry interior of western Iberia close to the Portuguese border. Duende is an organic Sauvignon Blanc made in a riper, more textured register than the cool climate norm for the grape. The warm continental climate and long hours of sun push ripeness and lift alcohol to 14.5 percent, giving stone fruit and tropical character rather than sharp green herbs. The wine is fermented and aged in barrel for seven months on its lees, with the lees regularly stirred so mannoproteins and fine sediment build a rounder, creamier mid palate. Oak contributes a light toast and vanilla and allows slow oxygen exchange that softens the wine and adds complexity, while enough acidity is held to keep it fresh. Expect a bright yellow colour, a nose of white peach, melon and elderflower over subtle toast, and a palate that is broad and supple with a warm, gently nutty finish. Serve at 10 to 12 degrees in a larger white glass.
