Description
Habla de ti Rosé comes from Bodegas Habla, in Extremadura in western Spain, a tranquil, slate-strewn landscape near the Portuguese border. It blends Cinsault, Grenache and Syrah, southern Mediterranean varieties suited to the warm, dry continental climate. The slate soils are central to the wine: they drain freely, restrict vigour and reflect heat by day while the wide diurnal range brings cold nights that slow ripening and preserve acidity, which is what keeps a rosé from this hot region fresh and balanced. The wine is built for texture as much as fruit. After a gentle pressing it spends five months on its lees in barrel, a longer and more involved ageing than most rosés receive. The breakdown of the spent yeast releases mannoproteins that round the palate and add a savoury, bready depth, while the barrel softens the wine through slow oxygen exchange. The colour is a soft, pale pink with a faintly golden cast. The nose is expressive, showing strawberry, white peach and citrus peel over white flowers and a subtle nutty note. The palate is dry, textured and savoury, with a clean, mineral finish. Serve at 9 to 11C. It suits grilled fish, poultry and lighter pork dishes.
