Description
Habla de Ti is a single variety Sauvignon Blanc from Bodegas Habla in the V.T. Extremadura, in western Spain near the Portuguese border. The grapes grow on young vines across a six hectare plot at 450 metres, trained on cordon trellising. The soils are sandy loam and the site has a large day to night temperature swing, which is central to this wine: warm days ripen the fruit while cold nights lock in the acidity and the aromatic precursors that give Sauvignon Blanc its lift. This is an organic wine. After harvest the grapes are moved quickly to the cellar and fermented for two months in stainless steel at a controlled 9 to 10 degrees. The long, cold ferment protects delicate aromatics and gives a clean, fruit driven style with no oak. The colour is pale with green highlights. The nose blends quince and yellow pear with a saline, seashell note and a hint of passion fruit. The palate is fresh and lively, with brisk acidity and a clean, citrus finish. Serve chilled at 8 to 10 degrees. It works as an aperitif and with light seafood and salads.
