Description
A Tapada is one of the historic estates of the D.O. Valdeorras, in the east of Galicia, and its Guitian Godello wines are benchmarks for the grape. This bottling is defined by its ageing: a full 36 months resting in bottle before release, as the name states. Valdeorras sits inland along the Sil river, on slate and granite soils that give Godello its mineral backbone, while the region's cooler, wetter climate preserves acidity. The extended time in bottle allows the wine to develop slowly in a reductive environment, softening its structure and building tertiary complexity while keeping the fruit intact. The result is a white with far more depth than a young Godello. The colour is bright gold. The nose is pronounced and layered, with plum, apricot skin, candied citrus peel and grapefruit flesh over honey and beeswax. The palate is full and vibrant, rich but carried by fresh acidity, with a long mineral finish and a light almond note. Serve at around 11C in a white wine glass.

Additional information
The weight and acidity make it a fine match for grilled white fish, scallops and lobster, as well as roast chicken. The mineral, honeyed depth also stands up to hard cheeses and dishes with a light cream sauce.
