Description
Guímaro is a benchmark grower in D.O. Ribeira Sacra, where vines cling to near vertical terraces above the Sil and Miño rivers in inland Galicia. Cepas Viejas is Godello from old vines rooted in slate and granite, worked by hand on slopes too steep for machinery. Ribeira Sacra sits far enough inland to escape the full Atlantic damp, so warm days and cool river nights ripen the fruit while holding acidity and aromatic detail. The slate drains sharply and reflects heat, lending whites a clear mineral line. Fermentation and six months of ageing take place in barrel, where contact with the fine lees and slow oxygen exchange give the wine texture and roundness without heavy oak flavour, letting the site show through. Expect a pale gold colour, a nose of white peach, pear and white flowers with a faint almond note, and a palate that is dry and textured with citrus freshness, a beeswax touch and a stony, mineral finish. Serve at 10 to 12 degrees.
