Guímaro makes this young Ribeira Sacra red from Mencía grown on steep slate terraces in Amandi. Worked entirely by hand and bottled without oak, it shows bright red fruit, fresh cherry and a stony minerality from the slate.
Description
Guímaro 2025 is a young red from the Adega Guímaro in Ribeira Sacra, Galicia, made from Mencía grown on the steep terraced slopes of Amandi, one of the appellation's five sub-zones. The terraces sit on slate soils that the Romans first planted more than two thousand years ago, and the vineyards here are still tended by hand because the gradient rules out machinery. Slate retains and reflects heat, helping Mencía ripen on these cool north-western sites while keeping good acidity, and it lends the wine its mineral, stony character. The grapes are fermented without new oak, so the fruit and the soil signature stay to the fore. The wine is a bright ruby colour. The nose leads with fresh red fruits, raspberry and cherry, with a floral lift and an earthy, mineral edge. The palate is light and fresh, with moderate tannin, juicy acidity and a clean, savoury finish. Serve lightly chilled at 14 to 16 degrees, which suits its weight and brings out the freshness. It works well with roast chicken, grilled salmon and charcuterie.
