Description
Jean-Pierre Grossot is a third generation grower based at Fleys, on the eastern side of the Chablis appellation. Mont de Milieu is a south-facing Premier Cru whose Kimmeridgian marl is packed with fossilised oyster shell, and this limestone bedrock is what gives Chablis its cool, saline cut. The family work their 18 hectares organically under Ecocert certification, which keeps the soils living and the fruit expressive. Chardonnay here is picked at moderate ripeness to hold natural acidity, then fermented and raised largely in tank rather than new oak so the Kimmeridgian character stays in the foreground. Time on fine lees adds a light texture without masking the stony core. The wine is pale gold with a green tint. The nose leads with lemon, green apple and pear over white flowers and a wet-stone note, and the palate is dry and taut, the citrus fruit framed by that chalky, faintly salty minerality that carries through a long finish. Serve at 10 to 12 degrees in a white Burgundy glass.
