Description
Grimalt Caballero is made by 4 Kilos Vinícola in Felanitx, on the island of Mallorca. The winery was founded by Francesc Grimalt and Sergio Caballero, and the name refers to their modest starting investment. The wine is built mainly on Callet, complemented by Fogoneu, both indigenous Mallorcan varieties farmed organically. These are naturally pale, low colour grapes suited to the island's warm Mediterranean climate, and they give a light bodied red of just 12% alcohol rather than a heavy southern style. The wine ages fourteen months in French Allier oak, a long but gentle élevage in fine grained wood that softens the tannins and adds a light spice without masking the delicate fruit. The colour is a bright crimson. The nose shows fresh red fruits, raspberry and cherry, over dried herbs and a touch of vanilla from the barrel. The palate is light and fresh, with soft tannin, lively acidity and an earthy, faintly peppery finish that reflects the island soils. Serve at 15 to 16 degrees, lightly chilled in summer. It suits roast poultry, pork and Mediterranean vegetable dishes.
