Grays New Grove Bourbon Cask Rum

New Grove Bourbon Cask is a young molasses rum from Grays on Mauritius. It is a molasses spirit rather than an agricole, made in the house style on a column still for a clean, light base, and aged three years in ex-bourbon casks that do much of the flavour work.

The bourbon cask influence comes through clearly: vanilla, light caramel, orange and gentle spice over a fairly simple, light body, finishing warm and lightly roasted. This is a relaxed, undemanding rum rather than a deep or complex one, and the copy is straight about that. At 40% it is soft and approachable, a sensible first step into rum for someone who enjoys gentle bourbon, or a mellow base for cocktails. Drinkers already chasing bolder, more layered rums will likely find it too tame, but as an easy everyday pour it does its job cleanly.
