Grays is an established Mauritian producer, and this Mauricia Signature is made from fresh-pressed sugar-cane juice, distilled on a column still. Mauritius sits outside the agricole appellations, so this is an agricole-style island rum rather than an AOC bottling, with a dessert-leaning character shaped largely by its cask programme.
Double-matured first in ex-bourbon barrels and then finished in cognac casks, and bottled at 45%, it offers a gourmand nose of butterscotch, toffee and cream, a sweet, woody, spiced palate, and a finish of dried fruit and warm spice. The cognac finish pushes it toward the richer, more confected end of the spectrum while the strength keeps it firmly rum-like on the palate, making it an after-dinner pour for those who enjoy a sweeter, oak-driven profile.
