Description
Can Rafols dels Caus lies in Avinyonet del Penedes, in the heart of the Garraf massif near Barcelona, and makes this red entirely from Pinot Noir. The fruit comes from the Pere Pau vineyard, planted on clay and limestone soils that the estate farms sustainably, without insecticides or herbicides. The calcareous ground is central to the wine's character, giving bright acidity and a fine savoury structure, while the elevation of the Garraf hills brings cooler nights that preserve freshness and aroma in a grape that struggles in heat. The wine is aged for six months in French oak, then held for a further thirty months in bottle before release, an unusually long maturation that softens the tannin, integrates the oak and allows tertiary, savoury complexity to develop through slow reductive ageing. The colour is medium ruby with some evolution at the rim. The nose shows red cherry and raspberry over earth, dried herbs and a light spiced note. The palate is medium bodied and savoury, with fine tannin, fresh acidity and a long finish. Serve at 16 degrees. It suits poultry, duck and mushroom dishes.
