Description
Gramona Savinat is a varietal Sauvignon Blanc from Gramona, a Penedès winery founded in 1881 and now run by the fifth generation, working biodynamically across its vineyards. The fruit comes from the Can Agustí site, where the climate is Mediterranean, mild and warm, with rain spread through the year and an average temperature around fifteen degrees. Sauvignon Blanc is picked to hold its natural acidity, and the wine is made to keep the grape's aromatic, green character rather than to add oak weight, so the citrus and herbal side stays clear and defined. Biodynamic farming, with its emphasis on soil life and canopy balance, aims to give riper, cleaner fruit while retaining freshness in a warm site. The wine is pale with a green tint, and the nose is classic Sauvignon: lemon, green apple and elderflower lifted by white flowers and a sage and thyme herbal note. The palate is dry, light and taut, with citrus peel and a crisp, stony finish that makes it a good aperitif and an easy table wine. Serve well chilled at 8 to 10 degrees. It works with goat cheese, fresh salads, shellfish and light white fish.
