Description
Gramona makes this lightly sparkling white at Sant Sadurní d'Anoia in D.O. Penedès, from the three classic Cava grapes Xarel·lo, Macabeo and Parellada. The family has worked here since 1881 and now farms organically, and this wine, a mustillant, sits between still and fully sparkling, with a soft natural spritz rather than the firm bead of a traditional method fizz. It is low in alcohol at eleven per cent and made for easy drinking. The Penedès vineyards give the fruit its backbone, with Xarel·lo bringing structure and a slight bitterness on the close, Macabeo adding freshness and Parellada softening the whole. In the glass it is straw yellow with a light stream of bubbles. The nose shows green apple, pear and citrus with a floral edge, and the palate is fresh and dry, the gentle fizz carrying the fruit before a clean, mineral finish. This is a wine to serve cold and drink young while its spritz is at its best. Serve it at 6 to 8 degrees. It works as an aperitif and with shellfish, green salads and goat cheese.
