Gracias a Dios Mezcal Tobala is a joven from Santiago Matatlan in Oaxaca, made from the small, wild, slow maturing Tobala agave that can take well over a decade to ripen on rocky high ground. Only the hearts of the Tobala go into this bottling, and the brand replants three agaves for every bottle filled, a genuine point of distinction for a wild species under pressure.
Produced by maestro mezcalero Oscar Hernandez Santiago, the agave is roasted, milled and fermented in Santiago Matatlan before a copper pot distillation in the artesanal manner. Tobala is prized for its delicacy, and the result is aromatic and balanced, leaning floral and fruity with the mineral lift the species is known for and only restrained roast smoke behind it. Bottled at 45 percent, the higher strength carries the aromatics and keeps the agave fingerprint clear.
