Description
Gracias a Dios Espadin con Pina is a joven mezcal from Santiago Matatlan in the central valleys of Oaxaca, built on Agave angustifolia and finished with fresh pineapple from the same valley. The house is owned by Pablo Lopez, Enrique Jimenez, Xaime Niembro and Oscar Hernandez, with maestro mezcalero Oscar Hernandez overseeing production across five family generations. It is bottled at 45%, a strength that keeps the fruit lively and makes it as comfortable in a cocktail as it is on its own.
The Espadin is double distilled in copper, then the pineapple is worked in by hand to lift the spirit rather than mask it. The result leads with gentle pineapple and sweet and sour fruit, with lemon brightness on the nose and a core of caramel and cooked agave underneath. Lightly chilled or at room temperature it shows a medium finish, the agave still legible beneath the fruit.
