Description
Graci farms this white organically on the northern flank of Mount Etna, above Catania in Sicily, from the native Carricante and Catarratto varieties. The vineyards sit on decomposed volcanic soils of black sand, ash and lava fragments, free-draining ground that holds little water and pushes the vines to develop small, concentrated berries. Altitude and the cool mountain air widen the gap between day and night temperatures, which slows ripening and preserves the sharp natural acidity that defines Carricante. After a gentle pressing the wine ferments and then rests on its fine lees, a period of contact that feeds slow autolysis, drawing texture and a subtle savoury depth from the spent yeast while broadening the mid-palate. The colour is pale straw. The nose is precise, with ripe apricot, lemon zest, white peach and white flowers over a smoky mineral note that reflects the volcanic ground. The palate is dry and tightly wound, the fruit carried by firm acidity and a saline finish that lingers. Serve it at 9 to 11 degrees in a standard white glass. It suits grilled prawns, sea bass and fresh goats' cheese.
