Description
Stalla Dhu Whiskies operates as a Belgian focused independent bottling label, with the Cask Strength Limited Edition releases drawing single casks at undiluted strength under named release titles rather than age statements. The Late Hour Port Finish casts the bottling as an evening character expression, with NAS labelling reflecting either deliberate choice or shorter maturation than the firm typically discloses. This Glenrothes was bottled in 2022 at 64.2% from a Tawny Port cask referenced 222/01105, with 210 bottles released into the Belgian market.
Tawny Port casks differ from Ruby Port through extended oxidative ageing in seasoned wood, producing nutty and raisined character rather than fresh fruit notes. When the cask transfers to whisky, the residual port chemistry combines with European oak's slow lignin and hemicellulose breakdown to produce a layered fruit and nutty profile. A finishing transfer in the closing window concentrates the cask's residual character against the underlying spirit, while at 64.2% sustained strength, both the cask's residue and the European oak tannin push through hard.
On the nose, dried cherry and raisin sit over polished oak with a faint walnut undertone signalling the cask's Tawny heritage. The palate runs concentrated at 64.2%: red berry, dark chocolate and a developing rancio threading through, with European oak tannins emerging mid palate. The finish is long and slightly drying, with the Port cask's residual fruit eventually conceding to the cask's structural close.
