    Amontillado sherry occupies an unusual position in the Jerez spectrum: it begins biologically aged under a flor yeast layer like Fino, then loses the flor and finishes oxidatively like Oloroso. The casks themselves carry both signatures, contributing yeasty, nutty depth alongside the dried fruit chemistry of oxidative ageing. Nine years in Amontillado wood at 57% delivers a layered profile distinct from straight Oloroso or PX maturations, with the cask's biological era contributions emerging clearly at this age.

    The nose lifts toasted almond and dried apricot with a saline savoury lift signalling the cask's biologically aged origin. The palate carries honeyed barley, dried pear and a saffron coloured nutty depth, the 57% strength delivering the cask's character without overwhelming the spirit's Speyside fruit. The finish is medium long and slightly briny, the Amontillado's oxidative side leaving a walnut whisper rather than a full rancio grip.
