Signatory Vintage's Cask Strength Collection presents single cask bottlings at natural strength from the firm's Edradour warehoused stocks, a longer running range than the Symington's Choice tier within it. This Glenrothes 27 Years Old, distilled in 1996 and bottled in 2023 from cask 3151 at 49.9%, runs to 217 bottles destined for European markets. The naturally softened strength reflects long evaporation in warehousing favouring alcohol over water loss.
Twenty seven years in a refill bourbon cask produces a profile dominated by long incremental wood contribution rather than active first fill extraction. The cask's primary vanillin reserves were softened under previous tenancy, with the second life now contributing slowly through accumulated lignin and hemicellulose breakdown. Lactones produce coconut and creamy oak through cumulative contact, while ellagitannins build structure without the heavier tannic load European oak would deliver. The spirit's natural Speyside ester chemistry remains clearly at the front rather than being subsumed by active wood.
On the nose, honeyed barley sits alongside fresh apple, beeswax and a faint vanilla pod, the cask's gentle second life contribution clearly framing the spirit. The palate moves through cooked pear, lemon curd and a clean toasted oak note, the 49.9% strength delivering distillery character with minimal cask interference. The finish runs long and softly drying, the cask's diminished tannin signature giving the spirit's preserved Speyside fruit clear room to express.
