Description
Douglas Laing's Spirit Animal Series sits within the Old Particular range as a sub branding for select releases, with animal themed labels distinguishing individual casks within the programme. The Glasgow firm has bottled Scotch independently since 1948 and operates Old Particular as its main single cask programme. This Glenrothes 16 Years Old, distilled in 2004 and bottled in 2021 from cask DL 14701 at 56.3%, runs to 251 bottles released into the German market.
Sixteen years in a single Oloroso cask sits in the rich middle window for sherry maturation. The cask's first fill activity is well developed but not yet exhausted, with European oak's tannin contribution matured into structure rather than aggression. The residual Oloroso sherry residue has fully integrated through accumulated cask interaction, while lignin's breakdown delivers vanillin, syringaldehyde and eugenol alongside hemicellulose's furfural chemistry. The cask's sotolon contributes the savoury walnut depth that distinguishes well aged Oloroso.
On the nose, dark chocolate and dried fruit sit over polished oak with a leathery undertone signalling rancio development, a coal gas note threading through to mark the cask's oxidative depth. A toasted character emerges underneath. The palate moves through fig, raisin and a savoury walnut depth, with 56.3% strength delivering the cask's accumulated chemistry without astringency. The finish is long, slightly resinous and tannic, with European oak holding the spirit's Speyside fruit in tight balance.
