Duncan Taylor's Sherry Octave Small Batch programme draws on the firm's octave finishing system but vats multiple octaves together to produce a single release, smoothing individual cask variation while preserving the small format's amplified character. This Glenrothes 11 Years Old, distilled in 2009 and bottled in 2021 from casks 4932583, 4932593 and 4932603 at 55%, runs to 264 bottles released into the German market. The three octave vatting reflects DT's approach of pooling small format casks rather than releasing each individually.
Sherry octaves at the fifty litre scale concentrate cask chemistry sharply through high surface area to spirit ratio, accelerating extraction of vanillin, lactones and ellagitannins from the European oak staves while concentrating residual oxidised sherry. Vatting three octaves of similar profile produces a release that retains the small format's sharpened cask signature while presenting a more consistent profile than any single octave would. Eleven years of total maturation provides time for the underlying spirit to integrate before the octave window concentrates the close.
The nose carries raisin and fig with polished oak underneath, the small casks' concentrated sherry signature clearly forward. The palate moves through chocolate orange, dried prune and a leathery undertone, the 55% strength delivering the octaves' sharpened chemistry without scorching. Cocoa nib bitterness emerges mid palate. The finish runs long and resinous, the small format's tight extractive window leaving the spirit's Speyside character framed against intensified cask depth.
