Description
Cask Series 009 from North Star Spirits represents an early release within the firm's numbered Cask Series programme, which gathers individual distillery releases under sequential identifiers. The Glasgow based bottler has operated since 2016 under Iain Croucher's direction, presenting bottles at natural strength with transparent cask provenance. This Glenrothes 11 Years Old, distilled in 2007 and bottled in 2019 at 51.4% from Oloroso casks, runs to 618 bottles released into the event market.
Eleven years in Oloroso casks sits in the productive middle window for sherry maturation. The casks' first fill activity is well developed and European oak tannin contribution accumulating at productive levels. The residual oxidised sherry transfers fully to the spirit, while lignin's breakdown contributes vanillin and syringaldehyde and hemicellulose's furfural chemistry builds in the background. The cask's sotolon contributes the savoury walnut signature characteristic of mid aged Oloroso.
On the nose, chocolate sits with a citric coal gas lift signalling oxidative chemistry, with dried and fresh fruit threading through alongside a fragrant ester depth. The palate moves through fig, raisin and a developing leathery quality, the 51.4% strength delivering the cask's accumulated chemistry without astringency. Cocoa nib bitterness emerges mid palate. The finish runs long and gently tannic, European oak holding the spirit's Speyside fruit in balance against the cask's oxidative depth.
