Description
Glenfarclas from the distillery, a 25 year old, from 1989, at 46%, 2040 bottles in all. Glenfarclas is a Speyside single malt, the house behind the pioneering 105 cask strength. It was licensed in 1836 under Robert Hay and bought in 1865 by John Grant for 511 pounds. Direct firing chars the wash a little, lending the rich, nutty depth Glenfarclas is known for. It has been run by six generations of the Grant family, one of Scotch whisky's last truly independent houses.
Worked unhurried through the stillhouse, for the rich, sherried make Glenfarclas is known for. Maturation came in an Oloroso sherry cask, layered over the full Glenfarclas make. Through the evaporative decades the esters fold into raisin, fig, beeswax and a bittersweet chocolate. Maturation runs slow and even in the dunnage warehouses at Ballindalloch. The cool, slow dunnage ageing loses little to evaporation, the spirit holding its depth.
Bottled at 46%, it is rounded and full. A rich, sherried sweetness, with dried fruit, fig and walnut from the cask. The mouthfeel is full and coating, the fruit dark and sweet. A long finish carries raisin, chocolate and a treacle. This is a dark, fruity Speyside single malt.
