    An official Glenfarclas, a 37 year old, 1985, at 41.9%. Raisin, chocolate and a dark spice fill the glass, with dried fruit, fig and walnut from the cask. Licensed in 1836 and bought by John Grant in 1865, at Ballindalloch. Run by six generations of the Grant family since 1865, one of Scotch’s last independents. This is Glenfarclas’s deep, fruity Speyside style.

    Glenfarclas from the distillery, a 37 year old, from 1985, cask 2602, at 41.9%, 266 bottles in all. Glenfarclas is a Speyside single malt from Ballindalloch, in the heart of Speyside. It was licensed in 1836 under Robert Hay and bought in 1865 by John Grant for 511 pounds. Its spirit is matured almost wholly in sherry butts brought up from Jerez.

    It was distilled in copper pot stills, the direct fired stills lending a nutty depth. Maturation came in an Oloroso sherry cask, layered over the full Glenfarclas make. Ethereal and fragile, the decades draw it to a resinous, waxy depth of dried fruit, treacle and old oak. Maturation runs slow and even in the dunnage warehouses at Ballindalloch. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.

    At 41.9%, undiluted, it is dark and full. Baked apple, honey and a dark chocolate, with dried fruit, fig and walnut from the cask. A baked apple and a warm cinnamon lift the middle. A deep finish ends on dried fruit and a dark chocolate. This is a rich Speyside malt of dried fruit and nut.
