Its Family Casks draw single vintages from a deep, old inventory. Run by six generations of the Grant family since 1865, one of Scotch’s last independents. Description
A 30 year old Glenfarclas, a distillery bottling, from 1979, cask 11015, at 45.2%, 254 bottles in all. Glenfarclas, the glen of green grass, is a richly sherried Speyside single malt. It was licensed in 1836 under Robert Hay and bought in 1865 by John Grant for 511 pounds. It launched the 105 in 1968, one of the first cask strength single malts sold to the public.
The spirit was drawn from a thick, heavy wash, the direct fired stills lending a nutty depth. Ex-Bourbon casks held it, the American oak lending vanilla and a light honey. Ethereal and fragile, the decades draw it to a resinous, waxy depth of dried fruit, treacle and old oak. The full spirit deepens with time, the cask drawing out its darker register. Maturation runs slow and even in the dunnage warehouses at Ballindalloch. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.
At 45.2%, undiluted, it is dark and full. Baked apple, honey and a dark chocolate, lifted by a sweet oak. The mouthfeel is full and coating, the fruit dark and sweet. The finish runs long, full and warming. This is a deep, sherried Speyside single malt.
