Description
This official Glenfarclas, a 27 year old, from 1990, cask 5119, at 49.7%, 525 bottles in all. Glenfarclas is a Speyside single malt drawn from the largest, direct fired stills in Speyside. Its water rises from the granite of Ben Rinnes, above the distillery at Ballindalloch. It draws on that deep inventory for the Family Casks, single vintages reaching back to the 1950s.
Drawn from a thick, heavy wash, for a weighty, nutty spirit the sherry then deepens. It was matured in an Oloroso sherry cask, the wood working deep into the malt. At this evaporative stage ellagitannins lend structure while oxidation builds a richer raisin and treacle. The full spirit deepens with time, the cask drawing out its darker register. Maturation runs slow and even in the dunnage warehouses at Ballindalloch. Active wood drives the maturation, the cask deep in the malt.
Bottled at a cask strength 49.7%, it is deep and concentrated. Raisin, chocolate and a warm spice, with dried fruit, fig and walnut from the cask. Beneath it run dried fruit, dark sugar and a warm spice. It finishes long, full and fruity. This is Glenfarclas's deep, fruity Speyside style.
