    An official Glenfarclas, a 25 year old, 1999, at 53.9%. A rich orchard sweetness and dark sugar. Drawn from the largest, direct fired stills in Speyside, for a nutty depth. The house behind the 105, one of the first cask strength malts, from 1968. Its water rises from the granite of Ben Rinnes, above Ballindalloch. This is Glenfarclas’s deep, fruity Speyside style.

    Glenfarclas from the distillery, a 25 year old, from 1999, cask 7066, at 53.9%, 597 bottles in all. Glenfarclas is a deep, dark Speyside malt of dried fruit, nut and spice. It holds some sixty eight thousand casks on site in dunnage warehouses, with stock from every year since 1953. Its slow, cool dunnage maturation loses very little to the angels each year. Its water rises from the granite of Ben Rinnes, above the distillery at Ballindalloch. Its spirit is matured almost wholly in sherry butts brought up from Jerez.

    The spirit was distilled to a rich, generous cut, building a deep malt of dried fruit and dark sugar. It was matured in refill ex-Bourbon oak, a soft vanilla beneath the fruit. In the oxidative, evaporative years the spirit concentrates to dried fruit, dark chocolate and a waxy, resinous depth. The wood frames the spirit without ever stripping the full Speyside body.

    Bottled at a cask strength 53.9%, it is deep and concentrated. Date, fig and a warm cinnamon, lifted by a sweet oak. Beneath it run dried fruit, dark sugar and a warm spice. A long finish carries raisin, chocolate and a treacle. This is a richly sherried Speyside single malt.
