    A 25 year old Glenfarclas from the distillery, at 52.3%. Deep and dark, all baked apple, honey and a chocolate, with dried fruit, fig and walnut from the cask. Run by six generations of the Grant family since 1865, one of Scotch’s last independents. Its water rises from the granite of Ben Rinnes, above Ballindalloch. This is the family sherry malt of Ballindalloch.

    Glenfarclas from the distillery, a 25 year old, from 1996, cask 1070, at 52.3%, 542 bottles in all. Glenfarclas, the glen of green grass, is a richly sherried Speyside single malt. It was licensed in 1836 under Robert Hay and bought in 1865 by John Grant for 511 pounds. Its spirit is matured almost wholly in sherry butts brought up from Jerez. Its whiskies are bottled at their natural colour, without chill filtration.

    Drawn from a thick, heavy wash, shaping a rich Speyside body with real weight. It was fully matured in an Oloroso sherry cask, the wood deep in the rich spirit. In the oxidative, evaporative years the spirit concentrates to dried fruit, dark chocolate and a waxy, resinous depth. Active wood drives the maturation, the cask deep in the malt. The wood frames the spirit without ever stripping the full Speyside body.

    At a natural 52.3% it is full and rich. A rich orchard sweetness and dark sugar, with dried fruit, fig and walnut from the cask. The body is full and rich, the fruit deep and dark. A deep finish ends on dried fruit and a dark chocolate. This is a full bodied Speyside single malt of real richness.
