Drawn from the largest, direct fired stills in Speyside, for a nutty depth. Matured almost wholly in Oloroso sherry casks from Jerez. This is a Speyside single malt of real standing.

Description
A distillery release of Glenfarclas, a 24 year old, from 1993, cask 3951, at 59.4%, 536 bottles in all. Glenfarclas is a deep, dark Speyside malt of dried fruit, nut and spice. Its whiskies are bottled at their natural colour, without chill filtration. It draws on that deep inventory for the Family Casks, single vintages reaching back to the 1950s.
It was taken gently through wash and spirit stills, giving a deep, full bodied Speyside spirit. It was matured in an Oloroso sherry cask, the wood working deep into the malt. At this evaporative stage ellagitannins lend structure while oxidation builds a richer raisin and treacle. The wood frames the spirit without ever stripping the full Speyside body. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate. The full spirit deepens with time, the cask drawing out its darker register.
At 59.4%, undiluted, it is dark and full. Raisin, chocolate and a warm spice, with dried fruit, fig and walnut from the cask. The mouthfeel is full and coating, the fruit dark and sweet. Dried fruit, spice and a soft oak see it out. This is the family sherry malt of Ballindalloch.
