Description
A distillery release of Glenfarclas, a 23 year old, from 1999, cask 5212, at 55.3%, 585 bottles in all. Glenfarclas is a richly sherried Speyside single malt, run by the Grant family since 1865. Its six stills are the largest in Speyside and among the very few still fired directly, now by gas. It was licensed in 1836 under Robert Hay and bought in 1865 by John Grant for 511 pounds.
Taken gently through wash and spirit stills, shaping a rich Speyside body with real weight. It was matured in an Oloroso sherry cask, the wood working deep into the malt. Through the evaporative decades the esters fold into raisin, fig, beeswax and a bittersweet chocolate. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate. Maturation runs slow and even in the dunnage warehouses at Ballindalloch. Active wood drives the maturation, the cask deep in the malt.
Bottled at a cask strength 55.3%, it is deep and concentrated. A rich, sherried sweetness, with dried fruit, fig and walnut from the cask. The mouthfeel is full and coating, the fruit dark and sweet. The finish is long, rich and spiced. This is a dark, fruity Speyside single malt.
