Description
A 20 year old Glenfarclas, a distillery bottling, from 1998, cask 4455, at 54.8%, 219 bottles in all. Glenfarclas is a Speyside single malt from Ballindalloch, in the heart of Speyside. Its six stills are the largest in Speyside and among the very few still fired directly, now by gas. It launched the 105 in 1968, one of the first cask strength single malts sold to the public.
Taken gently through wash and spirit stills, for a weighty, nutty spirit the sherry then deepens. It rested in ex-Bourbon oak, oak lactones lending a creamy vanilla. Through oxidative maturity the esters concentrate, the orchard notes turning to raisin, fig and a dark chocolate. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate. The wood frames the spirit without ever stripping the full Speyside body. The cool, slow dunnage ageing loses little to evaporation, the spirit holding its depth.
At 54.8%, undiluted, it is dark and full. A rich, sherried sweetness, lifted by a sweet oak. It is full and fruity, the spirit carrying the cask. The finish is rounded, dark and spiced. This is the family sherry malt of Ballindalloch.
