Description
Glenfarclas from the distillery, a 20 year old, from 1997, cask 2, at 57.4%, 596 bottles in all. Glenfarclas is a deep, dark Speyside malt of dried fruit, nut and spice. Its slow, cool dunnage maturation loses very little to the angels each year. It was licensed in 1836 under Robert Hay and bought in 1865 by John Grant for 511 pounds. It draws on that deep inventory for the Family Casks, single vintages reaching back to the 1950s.
Worked unhurried through the stillhouse, the direct fired stills lending a nutty depth. An Oloroso sherry cask held it, drawing the rich spirit on over the years. Through oxidative maturity the esters concentrate, the orchard notes turning to raisin, fig and a dark chocolate. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate. The wood frames the spirit without ever stripping the full Speyside body.
At its natural 57.4% it is rich and chewy. A rich orchard sweetness and dark sugar, with dried fruit, fig and walnut from the cask. The mouthfeel is full and coating, the fruit dark and sweet. Dried fruit, spice and a soft oak see it out. This is the family sherry malt of Ballindalloch.
