    An official Glenfarclas, an 18 year old, 2005, at 59.6%. A deep, dark malt over a full, rich body. Drawn from the largest, direct fired stills in Speyside, for a nutty depth. Its Family Casks draw single vintages from a deep, old inventory. It holds tens of thousands of casks on site, with stock from every year since 1953. This is a deep, sherried Speyside single malt.

    An 18 year old Glenfarclas, a distillery bottling, from 2005, cask 3034, at 59.6%, 420 bottles in all. Glenfarclas is a Speyside single malt matured almost wholly in sherry casks from Jerez. It was licensed in 1836 under Robert Hay and bought in 1865 by John Grant for 511 pounds. Its water rises from the granite of Ben Rinnes, above the distillery at Ballindalloch. It draws on that deep inventory for the Family Casks, single vintages reaching back to the 1950s.

    It was worked unhurried through the stillhouse, for a weighty, nutty spirit the sherry then deepens. An ex-Bourbon barrel shaped it, vanillin and a soft coconut under the malt. Into oxidative maturity, slow air builds ripe esters and a darker chocolate, fig and date depth. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. The full spirit deepens with time, the cask drawing out its darker register.

    At a hearty 59.6% it carries real weight. Date, fig and a warm cinnamon, lifted by a sweet oak. It is full and fruity, the spirit carrying the cask. A deep finish ends on dried fruit and a dark chocolate. This is a rich Speyside malt of dried fruit and nut.
