Description
Glenfarclas from the distillery, an 18 year old, from 1988, cask 7033, at 56.3%, 572 bottles in all. Glenfarclas is a deep, dark Speyside malt of dried fruit, nut and spice. Its spirit is matured almost wholly in sherry butts brought up from Jerez.
Distilled to a rich, generous cut, the direct fired stills lending a nutty depth. It was matured in an Oloroso sherry cask, the wood working deep into the malt. Through oxidative maturity the esters concentrate, the orchard notes turning to raisin, fig and a dark chocolate. The cool, slow dunnage ageing loses little to evaporation, the spirit holding its depth. Active wood drives the maturation, the cask deep in the malt. Maturation runs slow and even in the dunnage warehouses at Ballindalloch. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.
Bottled at a cask strength 56.3%, it is deep and concentrated. A deep, dark sweetness, with dried fruit, fig and walnut from the cask. A baked apple and a warm cinnamon lift the middle. The close is rich and dark, fruit over a warm spice. This is Glenfarclas's deep, fruity Speyside style.
