Glenfarclas from the distillery, a 27 year old, from 1989, cask 13051, at 53.1%, 636 bottles in all. Glenfarclas is a deep, dark Speyside malt of dried fruit, nut and spice. It has been run by six generations of the Grant family, one of Scotch whisky's last truly independent houses. Direct firing chars the wash a little, lending the rich, nutty depth Glenfarclas is known for.
Distilled to a rich, generous cut, for the rich, sherried make Glenfarclas is known for. A bourbon barrel held it, the wood adding a soft honey over the fruit. In the oxidative, evaporative years the spirit concentrates to dried fruit, dark chocolate and a waxy, resinous depth. Maturation runs slow and even in the dunnage warehouses at Ballindalloch. Active wood drives the maturation, the cask deep in the malt. The wood frames the spirit without ever stripping the full Speyside body. The full spirit deepens with time, the cask drawing out its darker register.
At 53.1%, undiluted, it is dark and full. Baked apple, honey and a dark chocolate, lifted by a sweet oak. Fig, honey and a dark chocolate fill the middle. The finish is rounded, dark and spiced. This is a full bodied Speyside single malt of real richness.
