    A 20 year old Glenfarclas from the distillery, at 46%. Rich and full, with raisin, fig and a bittersweet chocolate, with dried fruit, fig and walnut from the cask. Bottled at natural colour, without chill filtration. Its water rises from the granite of Ben Rinnes, above Ballindalloch. This is a richly sherried Speyside single malt.

    A 20 year old Glenfarclas, a distillery bottling, from 1993, cask see note, at 46%, 9000 bottles in all. Glenfarclas, the glen of green grass, is a richly sherried Speyside single malt. It holds some sixty eight thousand casks on site in dunnage warehouses, with stock from every year since 1953.

    It was worked unhurried through the stillhouse, shaping a rich Speyside body with real weight. An Oloroso sherry cask held it, drawing the rich spirit on over the years. At oxidative maturity aldehydes lend a nutty edge while ellagitannins draw a drying, structured grip across the fruit. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. The cool, slow dunnage ageing loses little to evaporation, the spirit holding its depth. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.

    At an approachable 46% it is soft and fruity. A deep, dark sweetness, with dried fruit, fig and walnut from the cask. The mouthfeel is full and coating, the fruit dark and sweet. The finish is long, rich and spiced. This is a deep, sherried Speyside single malt.
