    An official Glenfarclas, an 11 year old, 2014, at 46%. Raisin, chocolate and a warm spice run through it, with dried fruit, fig and walnut from the cask. Run by six generations of the Grant family since 1865, one of Scotch’s last independents. The house behind the 105, one of the first cask strength malts, from 1968. This is the family sherry malt of Ballindalloch.

    This official Glenfarclas, an 11 year old, from 2014, at 46%, 3000 bottles in all. Glenfarclas is a Speyside single malt matured almost wholly in sherry casks from Jerez. Direct firing chars the wash a little, lending the rich, nutty depth Glenfarclas is known for.

    Drawn from a thick, heavy wash, shaping a rich Speyside body with real weight. It was matured in an Oloroso sherry cask, the wood working deep into the malt. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. The full bodied spirit takes active sherry wood well, carrying its dark sugars through the years. The wood frames the spirit without ever stripping the full Speyside body. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit.

    At 46% it is rich, fruity and deep. A rich, sherried sweetness, with dried fruit, fig and walnut from the cask. Fig, honey and a dark chocolate fill the middle. A deep finish ends on dried fruit and a dark chocolate. This is a dark, fruity Speyside single malt.
