Description
This official Glenfarclas, a 22 year old, from 1995, cask see notes, at 57.3%, 2400 bottles in all. Glenfarclas is a deep, dark Speyside malt of dried fruit, nut and spice. It holds some sixty eight thousand casks on site in dunnage warehouses, with stock from every year since 1953. Its spirit is matured almost wholly in sherry butts brought up from Jerez. Its slow, cool dunnage maturation loses very little to the angels each year.
Distilled to a rich, generous cut, giving a deep, full bodied Speyside spirit. It was fully matured in an Oloroso sherry cask, the wood deep in the rich spirit. At this evaporative stage ellagitannins lend structure while oxidation builds a richer raisin and treacle. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. The full spirit deepens with time, the cask drawing out its darker register.
At its natural 57.3% it is rich and chewy. Baked apple, honey and a dark chocolate, with dried fruit, fig and walnut from the cask. Fig, honey and a dark chocolate fill the middle. The finish is long, rich and spiced. This is the family sherry malt of Ballindalloch.
