Description
A 25 year old Glenfarclas from Whisky.de, distilled in 1993, at 46%, bottled for a whisky festival. Glenfarclas is a Speyside single malt, the house behind the pioneering 105 cask strength. Its six stills are the largest in Speyside and among the very few still fired directly, now by gas. It has been run by six generations of the Grant family, one of Scotch whisky's last truly independent houses. Its water rises from the granite of Ben Rinnes, above the distillery at Ballindalloch.
It was drawn from a thick, heavy wash, for the rich, sherried make Glenfarclas is known for. It was fully matured in an Oloroso sherry cask, the wood deep in the rich spirit. Through the evaporative decades the esters fold into raisin, fig, beeswax and a bittersweet chocolate. Maturation runs slow and even in the dunnage warehouses at Ballindalloch. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit.
At 46% it is smooth and rich. Baked apple, honey and a dark chocolate, with dried fruit, fig and walnut from the cask. A baked apple and a warm cinnamon lift the middle. A deep finish ends on dried fruit and a dark chocolate. This is the family sherry malt of Ballindalloch.
