Description
A distillery release of Glenfarclas, a 15 year old, at 46%. Glenfarclas is a Speyside single malt from Ballindalloch, in the heart of Speyside. Its spirit is matured almost wholly in sherry butts brought up from Jerez. Its slow, cool dunnage maturation loses very little to the angels each year.
It was drawn from a thick, heavy wash, the direct fired stills lending a nutty depth. It was fully matured in an Oloroso sherry cask, the wood deep in the rich spirit. Into oxidative maturity, slow air builds ripe esters and a darker chocolate, fig and date depth. The full spirit deepens with time, the cask drawing out its darker register. The full bodied spirit takes active sherry wood well, carrying its dark sugars through the years. The wood frames the spirit without ever stripping the full Speyside body. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.
At an approachable 46% it is soft and fruity. Baked apple, honey and a dark chocolate, with dried fruit, fig and walnut from the cask. Dried fruit and a treacle sit behind the spice. The finish is rounded, dark and spiced. This is Glenfarclas's deep, fruity Speyside style.
