    An official Glenfarclas, a 12 year old, at 58.9%. Orange, raisin and a treacle edge, with dried fruit, fig and walnut from the cask. Drawn from the largest, direct fired stills in Speyside, for a nutty depth. Run by six generations of the Grant family since 1865, one of Scotch’s last independents. This is the family sherry malt of Ballindalloch.

    Glenfarclas from the distillery, a 12 year old, at 58.9%, 600 bottles in all. Glenfarclas is a Speyside single malt, one of the last great family owned distilleries in Scotch. It was licensed in 1836 under Robert Hay and bought in 1865 by John Grant for 511 pounds. Its spirit is matured almost wholly in sherry butts brought up from Jerez.

    Worked unhurried through the stillhouse, giving a deep, full bodied Speyside spirit. It was fully matured in an Oloroso sherry cask, the wood deep in the rich spirit. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.

    At 58.9%, undiluted, it is dark and full. Raisin, chocolate and a warm spice, with dried fruit, fig and walnut from the cask. The mouthfeel is full and coating, the fruit dark and sweet. The finish is rounded, dark and spiced. This is a deep, sherried Speyside single malt.
